Roasted Pumkin Chili
You can make a hearty, flavorful chili served directly in a roasted pumpkin, making your meal festive, visually appealing, and perfect for autumn or Halloween.
Ingredients (for one large 10–12 pound pumpkin, or smaller individual pumpkins)

- 1 large pumpkin, top “lid” cut and insides scraped clean
- 1 lb ground beef (or turkey/chicken for lighter options)
- 1 large onion, diced
- 16 oz kidney beans, soaked overnight, rinsed, and drained
- 2 (14 oz) cans tomato sauce
- 2 (14 oz) cans petite diced tomatoes
- 1 ½ cups water or broth
- 1 batch homemade chili seasoning (or store-bought; includes chili powder, cumin, garlic powder, onion powder, smoked paprika)
- Garnishes: sour cream, shredded Cheddar cheese, green onions
